What is a Smoothie?
Smoothies are thick, creamy beverages usually blended from puréed fruits, vegetables, juices, yogurt, nuts, seeds, and/or dairy or nondairy milk. 

The most basic smoothie starts with two essential ingredients — a base and a liquid. From there, you can combine ingredients to your liking. Many smoothies include frozen produce or ice cubes to give the final product the cool, icy consistency of a milkshake. However, their flavour profiles vary tremendously depending on the ingredients.

Types of Smoothies

Most smoothies can be classified into one or two of the following categories — though there’s significant overlap between them:

  1. Fruit smoothies. As the name implies, this kind of smoothie usually features one or more types of fruit blended with fruit juice, water, milk, or ice cream
  2. Green smoothies. Green smoothies pack leafy green vegetables and fruit blended with water, juice, or milk. They tend to be heavier in veggies than regular smoothies, though they often include a little fruit for sweetness.
  3. Protein smoothies. Protein smoothies usually start with one fruit or vegetable and a liquid, as well as a major protein source like Greek yogurt, cottage cheese, silken tofu, or protein powder.

Green Dream Smoothie

This Healthy Green Dream Smoothie is packed with vitamin B3, niacin and folic acid. It makes 200ml but I doubled it to make enough for 2 people. A smoothie is a convenient way to boost your intake of fruits, vegetables and other fiber rich foods.

Equipment

  • 1 Juicer
  • 1 Blender

Ingredients

  • 250 gm green apple
  • 50 gm Celery
  • 50 gm Kiwi
  • ½ lemon
  • 100 gm Avocado

Instructions

  • Juice the apple, celery, kiwi and lemon
  • Transfer to blender with avocado and whizz for 20 seconds.
  • Decorate with kiwi slices if desired.
  • Slurp away and enjoy!

For a Mix with thicker consistency, use Full Fat instead of Low Fat. However, I found that my favourite brand “Lancashire Farm” Greek style Natural Yogurt with 10% fat did the job perfectly well with a lighter cream cheese. I love this brand because the yogurt is so thick and creamy in taste and texture, unlike other brands. Cream cheese should be at room temperature otherwise it will get lumpy when mixing. Whisk the cream cheese and yogurt till creamy and thick with a hand mixer on high speed. If using a stand mixer, use the whisk attachment. I added some chopped strawberries in the blend hence the pinkish colour. Chill for at least one hour or till it becomes firm. Best results would be overnight. To serve, top it with mixed berries or seasonal fruits.

Berry Yogurt-Cheese Breakfast Bowl

Berry Yogurt-Cheese Breakfast Bowl, dressed with berries or your favourite fruit. It's a 'Make Ahead' Breakfast and cheat Dessert too! Creamy and delicious with berries, a good way to get your 5 a day! This recipe whips cream cheese with rich Greek yogurt to create a thick, sumptuous substitute for ordinary whipped cream.  When served in small glasses, this creamy and delicious mix is a hit at any party!

Ingredients

Yogurt-Cheese Mix

  • 225 gm full fat cream cheese 8 oz
  • 250 gm plain Greek Yogurt 1 cup
  • 3-4 strawberries chopped, to blend with the mix
  • 1 tbsp maple syrup I used 1 tbsp natural sugar alternative
  • 1 tsp vanilla extract

Garnish/Topping

  • fresh berries
  • toasted nuts optional
  • fruit jam optional

Instructions

  • Beat cream cheese in a bowl with electric mixer for about 1 minute until softened. Use the whisk attachment if using a stand mixer.
  • Add the chopped strawberries, maple syrup and vanilla extract. Beat until smooth and well combined, stopping to scrape down side of bowl as needed.
  • Add yogurt and beat for a minute or two longer until mixture is smooth and fluffy, scraping bowl again.
  • Cover and refrigerate until ready to serve. Chill at least 1 hour. Best results would be overnight.

Notes

Storage : In the fridge for 3-5 days.
TIPS :
  1. Cream cheese should be at room temperature
  2. The yogurt is Plain Greek. 
  3. For a topping with a thicker consistency, use Full Fat instead of Low Fat.
